- Oil – 2 tbsp.
Cooking method
- In the pot, add 1 tbsp. L oil and add ginger, garlic and green chili and sauté for a few seconds.
- Now add the finely chopped and blanched spinach with spices and heat until the spinach is well cooked.
- Remove the ingredients from the pan to a bowl and add the grated breading with the boiled potatoes.
- Divide the mixture into equal small tikka-shaped balls.
- Pour the oil into the pan and finely fry the patties until crisp brown on both sides.
- Hot and crispy cutlets ready to serve with ketchup or green chutney.
Baked Matri

Ingredients
- Whole wheat flour – 1 cup
- Seed cup
- Kasuri met- 2 tbsp.
- Cracked pepper – 1 tsp.
- Cumin powder – 1 tsp

Cooking method
- Add all the dry ingredients to the bowl.
- Now add the oil and mix well until it reveals a broken sandy texture.

Ingredients-
- Moong dal – skinless, ½ cup
- Chana dal – skinless, ½ cup
- Masur – a cup

- Turmeric powder ½ tsp.
- Ginger pate ½ tsp.
- Mustard seeds – 1 tsp.
- 3-4 green chillies, cut and half
- Salt to taste
- Oil-2 tsp
Cooking method
- Soak all dals for at least 4-5 hours or overnight.
- Put them together in a grinder and grind to a thick paste.
- In a large bowl, mix dal pasta with turmeric powder, asaphoethis, cottage cheese and salt.
- Pour the dhokles or tin trays and pour the dough in a steamer with the lid closed.
- Let it soar for 10 minutes at a high flame temperature.
- After 10 minutes, remove the tray and let it cool.
- Cut it into any desired shape and decorate it with the release of mustard seeds and green chilies.
- Serve dal dhokla hot with green chutney.
Paneer Curry with Corn

Portions– four
Ingredients
- Paneer – 500 grams, cubic and finely roasted to light brown
- Ginger paste – 1 tsp.
- Garlic paste – 1 tsp.
- Green chili – 3-4, cut
- Cotton cup
- Turmeric Powder – 1 Tsp
- Coriander powder ½ tsp.
- Garam masala- ½ tsp
- Seeds of cumin – 1 tsp
- Oil – 1 tbsp.
- Salt to taste
- Bay leaves – 2
Cooking method
- Heat the oil in a saucepan and add bay leaves with cumin seeds.
- Now add ginger and garlic paste and sauté until they turn golden brown.
- Once they are cooked, add all the spices, cottage cheese and green chili.
- Stir them until they are cooked.
- As soon as the separation of fat occurs, add the fried breading and cook over medium heat for 10-12 minutes.
- Hot and cream curry tubes are ready to serve with tandoori roti or naan for better taste.
Baked Mixed Dal Kachori

Servings- four
Ingredients
- Whole wheat flour – 2 ½ cups
- Besan – 1 cup
- Suji- 3 tbsp.
- Salt to taste
- Urad dal- ½ cup
- Moong dal- 1 cup
- Chan's cup
- Ginger – 1/2 tsp, finely chopped
- ½ tsp garlic, chopped
- Seeds of cumin – ½ tsp.
- Powder Powder – Pinch
- Saunf- ½ tsp
- Coriander powder ½ tsp.
- Garam masala- ½ tsp
- Oil – for the formation and baking of dough
Cooking method
- Mix whole wheat flour, belan, sudzhi and butter in a bowl. Add water and remove the dough from it.
- Keep him aside and let him rest for a while.
- Preheat oven at 180.
- Soak dals overnight and put it in a blender with ginger, garlic, cumin seeds, Hing, coriander powder, garam masala and salt. Mix until it becomes a coarse paste.
- Now add 2 tsp. oil in the pan and paste the paste there. Fry until it turns golden brown. Set it aside to cool.
- Now, put the small balls of dough and put the dal, filling it in. Smooth it with a bench.
- Lubricate the baking tray with oil, place the kacoris on the tray and apply with oil. Place it in the oven for 200 and bake for about 10-15 minutes. Walk between them until it turns golden brown.
- Hot and delicious kakora are ready to eat with green chutney or alu-ki-bhaji.
Kesar Lassi

Portions– four
Ingredients
- Yogurt – 3 cups
- Warm milk ½ cup
- Saffron – a few strands
- Sugar Powder – 4 tablespoons
- Cardamom Powder – Pinch
- Almond – 10-12, finely chopped
- Pistachios-10-12, finely chopped
Cooking method
- Soak saffron strands in 1 tablespoon of warm milk and keep aside.
- Mix yogurt, milk, sugar and cardamom powder together in a blender and mix a little.
- Now add saffron milk and ice cubes and mix well.
- Pour chilled in glasses and decorate it with prayed almonds and pistachios.
- Sweet Kesar lassi is ready to savor.
Multiplayer Laddoos

Servings- four
Ingredients
- Ragi flour ½ cup
- Badge flour – ¼ cup
- Whole wheat flour – 1/2 cup
- Channelless cup
- Flaxseeds ¼ cup
- Sesame seeds – ¼ cup
- Jaggery- ½ cup
- Desi ghee – 2 tbsp.
- ½ tsp cardamom powder
- Roasted Almonds – 10-12, coarsely chopped
Cooking method
- Heat the ghee in a heavy-bottomed saucepan and fry all the flour with proper mixing. Stir occasionally until it turns light brown with flavor.
- Melt a pot of water in the water. You can also filter it to remove impurities, if any.
- Boil the syrup for napkins until it becomes a thick consistency. To do this, in a bowl, take water and dip a few drops of syrup. If it forms a softball when cooled, the syrup is ready.
- Now slightly massage the flour into the syrup and mix quickly until the pieces remain.
- Add nuts to the mixture.
- Make balls size laddoo in accordance with the desired size, while it is hot.
