Jerusalem artichoke sauce recipe
- 10 ounces of fresh chopped spinach
- 14 oz artichokes dried & chopped
- 3.5 cups Real California nonfat cottage cheese
- 1.5 cups grated Real California Spicy Cheddar
- ½ cup diced onion
- 1 TB chopped garlic
- ½ teaspoon salt and pepper
Lightly chopped spinach and artichokes. Combine all ingredients in a slow cooker and set for 2 hours or 4 hours.
Stir well every 20-30 minutes to cook vegetables and cottage cheese.
Serve with your favorite crisps, bread, and scoop vegetables.
Optional: Go to the dish and add more grated California cheese. The heat from the dish will melt it, or you can place it under the roasting pan for a minute to fry the top.
