Ready for the easiest cookie recipe of your life? Oh, and it can be done in many ways to turn from pumpkin cookies into chocolate chips (or your favorite)! I initially got this recipe as a healthy cookie from an old diet buddy in the form of a two-component cookie. But I added a 3rd one and shaped them into pumpkins for a fun Halloween party that the whole family will love.
I will share some variations below the recipe for more ideas on how to change ingredients. You can make many different flavors and types of cookies with the basic combination of cakes!
Easy Cake Mix Cookies with Pumpkin
- Box with cake (white, vanilla or spice)
- Jar of Pumpkin Puree – 15 oz. (mashed non pumpkin pie mix)
Preheat the oven to 350 degrees. Grease a cookie sheet with cookies or use a silicone cookie sheet.
Mix the cake mixture and pumpkin puree.
Put spoons of pumpkin mixture on a baking sheet. Gently add 1 pecan to the cookie as a pumpkin stalk.
Bake for 12-15 minutes or until tender. Enjoy it!
Store leftovers in an airtight container.
And the options for Cake Mix Cookies are endless! You can change the ingredients to your taste or food allergies. The basis is a mixture of cakes and pumpkin puree (canned pumpkin), but you can try your favorite taste of the cake or even try exchanging pumpkin.

Chocolate Chip Cookies -> Add chocolate chips to the dough as the 3rd ingredient
Peanut Butter Cookies -> Change Pumpkin Puree for Peanut Butter
Birthday Cake Cookies -> Funfetti Mix Cake with Sprinkles
Double chocolate chip cookies -> mix chocolate cake and add chocolate chips
