3 Ingredient Black Bean Soup with Cotija Cheese
I have a super easy and healthy recipe for Black Bean Soup with real Cotija cheese in California to share today! These are just 3 ingredients and really good! And to celebrate the month of Latin American heritage, I share some information about my favorite Mexican cheese – Cotiia.
Cotija cheese is my favorite, because it is salty and has a strong aroma, without spicy or overwhelming other flavors of the dish. I love eating it, rolled into a warm tortilla tortilla. So simple and tasty!
I am an American Mexican, so I am very familiar with this crumbly cheese used as a topping for tacos or soup. And this is very common in Mexican restaurants. But in case you didn’t use it at home … here’s some information about the taste, where it came from and how to use it:
It is usually sold in small mugs in the cheese section at your local grocery store. Be sure to find the real Californian milk seal when you buy it!

This recipe is so simple that it seems almost too easy, too good to be true … but it is delicious!
The secret is to use really good salsa. I like medium salsa with grilled peppers or something more garlic. And after combining all the ingredients, try and add more salsa or spice with salt and pepper as needed.
Ingredients:
2 cans of black beans (do not merge)
2 cups salsa (roasted garlic works great)
1/2 cup Real California Cheese
optional: cilantro, avocado, tortilla chips
Directions: Mix the beans and salsa in a saucepan and heat well. Stir.
Serve with scattered scoi cheese.
Additionally, add avocado, cilantro and tortilla chips (or your favorite toppings).
